I was there over the weekend on Sunday to be exact, and to my surprise that cooks that were supposed to be there at 7 am still had not shown up by 11:30 am when our reservation was set, was this just a fluke or will this be an ongoing issue?

No they dont. You can go to Nori Nori in sandy springs if you wanna do all you can eat sushi
